Skillet Corn

Ingredients:

1 tbsp butter or margarine
1 cup whole corn kernel
1/2 cup diced tomatoes
1/2 cup diced green bell pepper
2 tbsp sliced spring onions
4 pieces eggs, slightly beaten
1/3 cup NESTLE All Purpose Cream
1/2 tsp salt
a dash of pepper

Procedure:

Melt butter in skillet and stir in corn and tomatoes; continue cooking until tomatoes are limp.
Add bell pepper and spring onions and stir-fry until vegetables are cooked.
Combine eggs, all purpose cream, and seasonings; blend well.
Pour over vegetables and cook covered over low heat until top is set but not dry.
Cut into wedges, to serve.
